Ingredients


Makes: 4 Servings
  • 2 C (500 ml) panko or coarse, dry breadcrumbs
  • 1/4 C (60 ml) grated Parmesan cheese
  • 1 lb (450 g) large boneless, skinless chicken breasts, cut into thin strips
  • 1/4 C (60 ml) Balsamic Vinaigrette, prepared

Preparation


 
  • Preheat oven to 375° F (190° C).
  • In a shallow dish, combine first 2 ingredients and set aside.
  • Coat chicken with vinaigrette. Press in crumb mixture to coat both sides.
  • Arrange strips in a single layer on a Crisper. Bake for 20 minutes, or until golden.

Tip


 

Make it vegetarian:
Swap meat for 1 lb (450 g) sliced firm organic tofu.
